You don't have to wait until October to serve these tasty waffles.
2 cups of buttermilk waffle mix. I prefer "Krusteaz" available at Cosco.
1 cup water - You may have to adjust the amount of water to give a good consistency.
1 cup canned pumpkin
1 teaspoon pumpkin pie spice
1 teaspoon real vanilla
Mix all ingredients together. Pour batter on heated waffle iron. Sprinkle top with chopped Pecans. Bake on a Belgium waffle maker until hot and toasty. Serve sprinkled with Pecans and hot Vermont Maple Syrup.
