Whole Wheat and Walnut Pancakes presented by Payne Homestead at the Moses Webster House

2 cups whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup walnuts; chopped
2 eggs, beaten
1/4 cup vegetable oil
1-1/2 cups orange juice
In a bowl, mix dry ingredients and set aside.
In another bowl, mix eggs, oil and orange juice.
Add dry ingredients to egg mixture. Stir until blended, but leave some clumps in the batter to help create lighter pancakes.
Cook on a hot griddle or frying pan; turn once; remove when both sides are golden brown.
The pancakes should be about 1/2-inch thick.
Serve with apple or peach compote.
