4 ripe bananas
lemon juice
2/3 c. brown sugar
6 T. butter
ground cinnamon
3 T. banana liqueur or light rum
Peel the bananas and slice into 1 inch chunks. Brush them with lemon juice. In a saute pan or chafing dish, melt the sugar and butter together. Add the bananas and saute for 3-4 minutes, turning once. Sprinkle lightly with cinnamon. Drizzle the liqueur or rum on top and carefully, with a stick lighter, ignite the bananas. Pour over pancakes or French vanilla ice cream. Serves 6.
