Ingredients:
2 cups all-purpose flour
1 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs
3 large RIPE bananas, mashed
1/2 cup canola oil
1/4 cup plus 1 tablespoon buttermilk
1 teaspoon vanilla extract
1 cup chopped walnuts
In a large bowl, stir together flour, sugar, baking soda, baking
powder and salt. In another mixing bowl, combine eggs, bananas,
oil, buttermilk and vanilla.
Add wet ingredients to flour mixture, stirring just until
combined. Fold in nuts. Pour into a greased 9"x5"x3" loaf
pan. Bake at 350° for approximately 1 hour or until
it tests done.
