Heat oven to 400 degrees.
Combine and mix well with wire whisk:
5 eggs
2 T. melted butter
8 oz. Fat-free cottage cheese
2 cups shredded Monterey jack cheese
2 4-oz. cans chopped green chiles, drained
1/4 cup flour
1/2 t. baking powder
Pour into well-greased quiche pan. Bake 10 minutes. Remove from oven and place 8 small tomato slices evenly around quiche. Return to oven and reduce temperature to 350 degrees. Bake 20 minutes longer.
Cut into wedges and serve.
Serves 8. Recipe is easily doubled. Male guests frequently ask for a second slice!
