Sautee with 1 T. butter until soft and liquid is absorbed:
2-12 oz packages fresh mushrooms, washed and chopped
1 small onion, chopped
Mix in a large bowl:
30 oz. frozen chopped spinach, thawed and squeezed dry
8 oz softened cream cheese
1 cup sour cream
1 cup mayonnaise
Salt & pepper to taste
About 1 T. lemon juice
Optional: Fresh grated parmesan cheese
Sautéed onions and mushroom
Serve warm as a dip for crackers, or use to fill puff pastry shells, or as a
spread for sandwiches and paninis. This spread can be frozen for several
months.
