Ingredients:
2 cups flour
1 tsp salt
2 tsps baking powder
2 eggs
1/2 cup vegetable oil
1 cup sugar
2 tsps cinnamon
1 cup chopped nuts
Place flour, salt, baking powder, sugar, cinnamon, and nuts in a bowl. Mix
with a wooden spoon. Add eggs and oil, mix again. Pat mixture into a 9" x
13" glass greased baking dish. Turn on oven to 350 degrees.
Topping-
1 (8 oz) package of cream cheese, softened
1/3 cup sugar
1 beaten egg
dash salt
1 tsp vanilla
1 can pie filling, cherry or blueberry
Combine all ingredients except pie filling and mix with mixer.
Spread topping over flour mixture.
Bake in 350 degree oven approximately 1 hour.
Warm pie filling in microwave and after cutting coffee cake, top with pie
filling before serving. Or, if you prefer, pie filling can be placed on
coffee cake prior ro baking.
