FRENCH COCONUT PIE presented by North Avenue Carriage House Email this page to a Friend

4 tablespoons (1/2 stick) butter
2 eggs, beaten
1 tablespoon all-purpose flour
3/4 cup sugar
1 cup or 3 1/2 oz. can shredded coconut
1 cup milk
One 9 inch unbaked pie shell

Preheat oven to 400 degrees. Melt butter; add remaining ingredients. Pour into pie shell. Bake until firm, about 45 to 60 minutes. Serves 6 to 8.
