Ingredients:
Filets of halibut (salmon/lake trout)
Montreal Steak Seasoning
Olive oil
Onion (optional)
Lemon
Dill
Paprika (optional)
Mayonnaise
Heavy iron skillet works best. Put enough olive oil to cover bottom of skillet. Take a knife and score the top of halibut. Place filets of halibut on top of onion and spread on mayonnaise. The scored filets will help retain the mayonnaise and allow it to penetrate. Sprinkle Montreal Steak Seasoning to taste. Top with thinly sliced onion. Sprinkle on dill.
Put the skillet into a covered Barbecue Grill and cook at low heat until the meat flakes. Then adorn with thinly sliced lemon and a sprinkle of paprika.
It is also desirable to cook a couple of steaks along with this. The grease dripping into the coals will produce a nice smoke flavoring that will penetrate the halibut.
