Apple French Toast ala Mansion House presented by Mansion House B&B and The Courtyard on Fifth

8 eggs
4 cups milk
2 tbsp. Vanilla
6 large green apples - Granny Smith
1/2 cup butter
1/2 cup brown sugar
1 tbsp. Water
12 slices of French bread cut into 1" or bigger slices
Melt butter; add sugar and water. Slice apples thinly with the skins on and simmer in butter mixture for a couple of minutes until they are coated and semi soft. Pour into the bottom of a greased 13x9 inch pan and let cool.

Beat eggs, milk and vanilla together. Layer bread over apples to cover the entire dish. Pour the egg mixture over all. Be sure that all of the bread is wet. Sprinkle the top with cinnamon. Refrigerate overnight or bake immediately at 350 degrees for 40-50 minutes or until golden brown and puffy. If you prepare it overnight, put it into a cold oven and turn on the heat. Serves eight.
You can top with warm maple syrup with pecans or the Mansion House Cream Sauce:
Equal parts of Vanilla Yogurt and non-dairy topping such as Cool Whip
And at least 1/4 cup of finely chopped pecans.
