Breakfast Crepes presented by The Maine Stay Inn & Cottages

Ingredients
4 eggs
1 cup flour
1 cup milk
1 T light brown sugar
1/4 tsp. almond extract
Directions
I prepare this recipe to use in the Blueberry Almond Crepes. In a blender container, place eggs, flour and milk, bron sugar and almond extract. Spray crepe pan or small fry pan with non-stick cooking spray. Heat over medium heat until hot. Add about 3 tablespoons of batter to the hot pan, tilting the pan to make an even layer. Cook on one side until crepe begins to brown, about one minute. Remove from pan, place on a piece of wax paper. Repeat with remaining batter, layering the crepes on top of each other. I use this recipe to make Blueberry Almond Crepes.
Yield: 18 crepes
