1/4 cup chopped shallots
1/2 cup dried cranberries
1/2 cup champagne vinegar
1/8 tsp ground cinnamon
1/2 cup canola oil
1/8 cup honey
Salt and freshly ground black pepper
Technique:
Sweat shallots in 1 Tbsps of the oil over low heat about 1 minute. Add cranberries, vinegar and cinnamon and simmer to reduce volume by 1/2.Whisk in remaining oil and honey. Season with salt and freshly ground black pepper.
Great on our Grilled Quail and Pear Salad or a Grilled Chicken Breast Salad.
