Decadent Cocoa Zucchini Bread presented by Letson Loft Hotel

3 cups flour
½ cup cocoa powder
1 teaspoon cinnamon
2 ½ teaspoons baking powder
1 ½ teaspoons baking soda
½ teaspoon salt
3 lightly beaten eggs
2 cups sugar
1 cup canola oil
2 teaspoons vanilla
2 cups firmly packed shredded zucchini
½ cup milk
1 cup chopped nuts - try pine nuts!
- Preheat oven to 350. Butter and flour one Bunt pan or two bread pans.
- Sift together first 6 ingredients in a medium bowl.
- Whisk next 6 ingredients together in a large bowl until well blended.
- Add dry ingredients to wet, mixing until just blended. Stir in nuts.
- Pour batter into prepared pans.
- Bake for 50 to 60 minutes until done.
