1½ c. Rolled Oats
1 c. Unbleached Flour 2 T. Brown Sugar 3 tsp. Baking Powder ¼ tsp. Ground Cinnamon ¼ tsp. Salt ½ c. Chopped Pecans Mix thoroughly in large bowl. (Save some pecan halves for a surprise in the pancake. Stick one half in the center just before turning.)
2 Eggs, whisk with fork Fold ingredients into dry mixture. Mix thoroughly. Allow 10 minutes to "rest". Mixture may become "dry". Add a small amount of milk. Do not make it "runny".
4 T.(½ stick) Unsalted butter Melt butter and brown sugar together over low heat. Add orange juice and zest. Mix. Serve in small pitcher.
Use medium ladle (¼ c.) to drop batter on hot seasoned griddle.
