1 1/2 c flour
3/4 c brown sugar
1/2 t each baking soda and salt
1/3 c veg oil
1 egg
1/2 cup buttermilk
1 t vanilla
1 cup fresh rhubarb (diced)
1/2 cup chopped pecans
Topping
1/4 cup brown sugar
1/8 cup chopped pecans
1/2 t cinnamon
Combine all ing except for the topping and mix well. Fill muffin tins 3/4 full. Put topping over top and bake
at 375 for 25 min.
