Pancake Alley Pancakes presented by Hueco Springs Inn

2 cups unbleached flour
3 tablespoons baking powder
3/4 teaspoon salt
2 tablespoons sugar
2 eggs
2 cups plus 3-4 tablespoons milk
3 tablespoons oil
- Combine all dry ingredients in a medium size bowl.
- Blend in eggs, 2 cups milk and oil. Mix well. Add more milk for thinner pancakes.
- Pour 1/2 cup portions onto hot griddle. Flip after bubbles on the surface pop.
- Serve with butter, peanut butter and syrup.
