Sweet Potatoes with Bacon presented by Greenock House Inn Email this page to a Friend
Ingredients:
1/4 lb Bacon
2 small or 1 large Sweet Potato

Steps:

Slice peeled sweet potatoes very thin. Saute bacon pieces in a large skillet until the edges are just becoming crisp. Add sweet potato slices. Toss to coat. Continue cooking until sweet potato is cooked through and the bacon has fully crisped. Serve as a side with any breakfast item.
