Found this receipt in a magazine supplement. Our guest at our B&B claim this to be one of the best fall "comfort" muffin they have ever tasted. Seconds are a must!
3 1/2 cups of flour
2 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cloves
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt
Mix all the dry ingredients above in a bowl and set aside.
2 cups solid pack pumpkin (not pie filling)
1 cup of oil
2 cups of sugar
3 eggs
Mix all the wet ingredients above with an electric mixer.
Add dry ingredients to the wet ingredients and mix by hand.
1 cup of chopped walnuts or pecans
1 cup of golden raisins
Add the above fruit and nuts to the batter. Mix by hand.
Spray muffin tins, filling 2/3 full with batter. Bake at 350 degrees for 20-25 minutes. Remove and cool on rack before added Orange Glaze. Makes 1 dozen large or 24 medium muffins.
Orange Glaze:
1 1/2 ounces of cream cheese (soften)
1/4stick of butter or margarine (soften)
1/2 teaspoon of vanilla
1 cup 10X sugar
Orange juice
Mix the above ingredients (except orange juice) until smooth. Will be thick. Add enough orange juice to make a thin but not watery glaze. Spoon over cool muffins allowing the glaze to run down the sides. For decoration add chopped walnuts or pecans and very thin curved orange peel.
