|
3 cups sifted flour
2 cups sugar
1 cup oil
3 eggs
3 cups shredded zucchini
1/2 cup pureed bananas
1/2 cup golden raisins
1/2 cup find chopped pecans
2 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
|
Preheat oven to 350 degrees. Grease and lightly flour a 13 x 9 pan. Mix all the above ingredients together. Pour into floured pan. Bake at 350 for 50 to 55 minutes. Do not over bake. Absolutely wonderful!
Special note:
- Cut the tea bread into smaller loaves to serve.
- This bread will freeze well up to 6 weeks. Seems to enhance the flavor after frozen. Make sure you wrap airtight to preserve the freshness.
- Only use golden raisins.
- Only use pure vanilla.
