Banana Yogurt Pancakes presented by Gourmet Fleurs Bed & Breakfast

1 Cup Flour
1 Tablespoon Sugar
1 Teaspoon Baking Soda
½ Teaspoon Salt
Whisk together in medium bowl
2 Large Eggs
1 Cup Plain Yogurt (I use Nancey's whole milk w/ honey)
Whisk together in separate bowl and add:
1 ½ Cups Mashed Ripe Banana
¼ or ½ Cube Butter, Melted
Add dry ingredients to wet ingredients just until incorporated. Batter will be lumpy. Spoon onto 325 degree grill and flip when first bubble pops. Best with powdered sugar sprinkled over the top and served with butter. Syrup overwhelms the delicate taste of these pancakes. Garnish with 5 slices of banana cut ¼ inch thick after you have sprinkled with powdered sugar.
