Spicy Eggs and Cheese Souffle presented by Gingerbread Mansion Inn

1 loaf sliced sourdough french bread 1 1/2 cups shredded Jack cheese 1 1/2 cups shredded
cheddar cheese 1 - 4 oz. can chopped mild green 2 1/2 cups cubed cooked ham chile peppers
12 eggs 2 cups milk 2 1/2 tsp. dry mustard Chopped green onions Chopped mushrooms Dash of
cumin
Cut bread into cubes and place enough in a greased 8 oz. ramekin to fill bottom. Sprinkle chile
peppers, mushrooms, and green onions over bread. Divide shopped ham evenly among the ramekins
and top with cheeses. Sprinkle with paprika; cover and store in refrigerator overnight. Bake
uncovered at 350 degrees for 30 minutes. (Yields 12 - 8 oz. servings)
