4 eggs
1 Tbsp honey or pure maple syrup
2 Tbsps cottage cheese
2 Tbsps melted butter
1 cup half-and-half
1 1/2 cup flour
Combine all ingredients except flour in blender at medium speed. Add flour, process until smooth. Add more milk if necessary. Let batter sit for an hour and blend again before cooking.
Heat lightly buttered heavy 7"-9" frying pan or crepe pan to medium-high heat. Fill 2-ounce ladle and pour into pan. Roll batter to cover pan. Cook to golden brown and dry on top, flip and brown on other side for one minute.
Keep warm in 200° oven stacked on top of each other.
Serve with fresh, slightly cooked strawberries or peaches. Simply roll filling into crepe and drizzle some of the fruit syrup on top. Garnish and serve.
