Banana - Carrot Bread presented by Emery House Bed & Breakfast

- Mix:
- 1 cup mashed bananas (3)
- 1 cup white sugar
- 3/4 cup canola oil
- 2 eggs (beaten)
- Stir in:
- 2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- Mix in:
- 2 cup grated raw carrot
- 1/2 cup chopped nuts
Mix all ingredients well.
Turn into 2 medium loaf pans (well greased).
Bake 350 degrees 45 mins. or til done. Cool before wrapping. Freezes well.
