Ingredients:
1/2 cup butter (1 stick)
1/2 cup sugar
1 cup flour
1 egg yolk
1 teaspoon vanilla
1 pinch salt
1 cup chopped pistachio nuts
Soften butter to room temperature and mix all ingredients except nuts thoroughly into butter (use hands if necessary). Pinch off small pieces of mixture and roll into balls the size of a large marble (option: roll into crushed pistachio nuts). Place on cookie sheet. Make a depression in each; fill this with jam or jelly. Bake in 350-degree oven for 20 to 25 minutes. Watch carefully as they burn easily.
