1 tablespoon good olive oil
1/2 teaspoon sage - Fresh chopped if possible, or buy some leaf sage,
get the stems out and soak in olive oil for a while (it keeps like this for
months)
Scant 1/8 teaspoon dried thyme
1 heaping tablespoon green onion tops, chopped
2 Extra large eggs
1/8 cup grated cheddar cheese (sharp)
A pepper mill
Put the olive oil in a 7" x 4" ramekin and run it around the bottom and sides.
Put the sage in the bottom and add the thyme. Break the two eggs into the
ramekin and sprinkle the green onion over the top. Top this with the cheddar
cheese.
Bake in the oven (400 degrees) for 10 minutes. Remove and grind a bit of
pepper on the top and enjoy.
