Peel, chop, and cook one large potato (or two small) until tender
Mix in bowl with 8 eggs
1/2 cup cottage cheese
1/2 cup pimento cheese
1/2 cup cheddar cheese
add 2 dashes of Mrs. Dash
Bake at 350 degrees for about 45 minutes until knife comes out clean.
