Toasts with Creamy Goat Cheese presented by Brookhill Bed and Breakfast

Ingredients:
12 slices of sourdough or other hearty bread
2 tbsp. olive oil
2 ounces fresh goat cheese
1 tsp. freshly squeezed lemon juice
1/4 tsp. kosher or sea salt
1/2 tsp. freshly ground black pepper
1/4 cup heavy cream
Preheat oven to 325 degrees F. Put bread slices on baking sheet and coat with olive oil and bake until very light golden brown, about 5 minutes. Remove from oven and cool. Put goat cheese in bowl and break up with a spoon. Stir in the lemon juice, salt and pepper. Gradually work in the cream. This mixture can be made a day ahead and kept well covered in the refrigerator. Serve the cheese with a butter knife and let people spread their own bread.
