Ingredients:
4 4 inch ramekins, sprayed with vegetable oil and buttered
32 fresh medium spinach leaves, washed and dried, rolled and sliced
12 slices Canadian Bacon
salt and pepper, as needed
8 fresh eggs
1 cup Yellow and White Cheddar Cheese, grated
Paprika, as needed
4 English Muffins, toasted
1 recipe Hollandaise Sauce
Place 8 rolled and sliced spinach leaves in the bottom of each ramekin. Place 3 slices of Bacon on top of spinach. Break 2 eggs over the Bacon in each
Ramekin. Sprinkle cheeses over the top. Dust with Paprika.
Bake the benedicts for 20-25 minutes at 350 degrees. Remove from
the oven. Separate crusts from the side of the dish with paring knife,
carefully lift out Benedict onto English Muffin. Top with Hollandaise
Sauce and Paprika. Serve with fresh fruit garnish.
