"This is an extremely popular breakfast dish with our guests. You may add ham or other vegetables for variation."
1 loaf French bread
1/2 cup chopped onion
2 - 10 oz. packages frozen chopped spinach
1 cup grated cheddar cheese
15 eggs
2 1/2 cups milk
salt and pepper to taste
dash of Mrs. Dash seasoning or other favorite spices
sour cream
Parmesan cheese
Tear or cut the bread into small pieces and layer on the bottom of a greased 13x9 inch pan. Layer with spinach, onions, mushrooms, and cheese. Beat the eggs with the milk and spices until frothy. Pour over the mixture in the pan, cover with foil and refrigerate overnight. Let stand at room temperature for 30 minutes before baking. Bake in a preheated 350F oven until the eggs are almost set, approximately 50 minutes. Uncover and spread with a layer of sour cream and Parmesan cheese and bake 10 -15 minutes.
