Sage Sausage & Egg Casserole presented by Amado Territory Inn

2 pounds sage sausage
1 pound grated jalapeno cheese
1 teaspoon dry mustard
1 teaspoon paprika
2 teaspoons salt
2 cups sour cream
2 red bell pepppers diced
2 green bell peppers diced
1 yellow bell pepper diced
1 medium brown onion diced
25 to 30 eggs (depending on crowd)
salt and pepper to taste
Preheat oven to 325. Cook and drain sausage. Spray 2 or 3 quart dishes with vegetable spray. Put half of the cheese on the bottom of each dish. Saute all bell peppers and onion and add to drained sausage. Put all in mixing bowl. Add sour cream and spices in another bowl and mix. Add to sausage mixture. Crack all of the eggs and add to the sausage mixture. Pour about three quarters of the way up to each dish. At this point, you could cover with foil and put in refrigerator or you could bake it, depending on day being used. Bake for 25 to 30 minutes or until eggs are set.
