Caramel French Toast
Kindly given to me by a Doubleday guest.
Ingredients:
1 cup firmly packed brown sugar
1/2 cup margarine
2 T light corn syrup
8 slices thickly sliced Italian bread
6 eggs
1 1/2 cups milk
1 t vanilla
1/8 t salt
In a saucepan combine brown sugar, margarine and corn
syrup. Bring to a full boil, reduce heat to medium and
simmer until thickened (approx. 2-3 minutes). Pour mixture
into a greased 9x13 inch baking dish. Place bread evenly in pan.
Beat eggs and add all other ingredients. Pour over bread. Cover
and refrigerate overnight.
In the morning bake, uncovered, 45 minutes in a 350° oven,
until light brown.
