As a welcome to my guests, I leave homemade cookies and a refreshing beverage in their rooms. These are the most popular cookies. In a large bowl, beat together 1/2 cup shortening, 1 1/4 cups sugar, 1/2 cup molasses and 2 eggs. Sift 1 3/4 cups of flour with 1 tsp. each of salt, soda and cinnamon. Add to above mixture. Stir in 2 cups of oats (I prefer regular) and 1 1/2 cups raisins. I like to mix some of the oats with the raisins so they are well separated and spread nicely through the batter. Drop by spoonful on a lightly buttered cookie sheet. Bake at 375 degrees for 8 to 10 minutes. For variety, reduce raisins to 1 cup and add 1/2 cup of chocolate chip or butterscotch morsels.
