1. Trim crusts from bread. Arrange half of it in a 13x9 inch baking dish coated with cooking spray.
2. Combine milk, 1 and 1/2 cups of egg, the half & half, and 1/2 cup of the sugar in a large bowl, stirring with a whisk. Pour half of the mixture over bread in the dish.
3. Combine the remaining eggs, the remaining sugar, the vanilla, nutmeg & cheeses in a food processor or blender until smooth. Pour cream cheese mixture over the moist bread in the dish. Top with the remaining bread; pour the remaining milk mixture over bread. Cover & refrigerate 8 hours or overnight.
4. Preheat oven to 350.
5. Uncover & bake at 350 for 55 minutes. Let stand 10 minutes before serving. Top with sauteed apples & serve with maple syrup if desired.

FOR THE SAUTEED APPLES
Peel, core and slice 4 medium apples. Melt 3 Tbl of butter in a large sautee pan over med-hi heat. Add 3 Tbl of dark brown sugar & the sliced apples, stirring to coat & cooking until just tender.
