Introduction
Come find the magic beneath the moss-laden oaks, walk the banks of Bayou Lafourche, take a stroll in Thibodaux's historic downtown where renovated 19th century homes with New Orleans style wrought-iron balconies front Canal Boulevard. Joyce is a descendant of an Acadian family that emigrated from Canada during the exile of the Acadians. Joyce loves her heritage and speaks about it passionately. She has written a cookbook, La Cuisine des Cajuns sur le Bayou, full of Cajun cuisine including gumbo, crawfish, stuffed crab, alligator sauce piquante, jambalaya, etc. You may buy a copy so you can cook for your friends.
Frank, also an Acadian, comes from a family of seventeen children. It is easy to see why he enjoys having people near him! He is retired from a naval construction site and now enjoys his free time. He is always in a good mood and ready to help you. He is also an avid fisherman and loves to fish near the gulf of Mexico.
