| Irish Soda Bread |
1/2 cup butter
1 cup sugar
4 eggs
2 cups buttermilk
3 tsps. baking powder
1 tsp. salt
1 tsp. baking soda
5 cups flour
1 cup raisins
2 T. caraway seed (optional)
In medium-sized bowl, cream butter, sugar and eggs. Stir in buttermilk. Add baking powder, salt and baking soda. Add flour and raisins, and mix well. Pour into 2 greased and floured bread pans and bake at 350 degrees for 1 hour.
