Carmelized Bacon
1 lb reg bacon
Sprinkle with Brown Sugar (granulated light brown sugar is easy) Serves: 4
Layer broiler pan with tinfoil. Cover with regular bacon. Sprinkle evenly with light brown sugar. Turn on broiler to Hi and place broiler pan about mid oven (too close will burn sugar). Broil about 5 min.
Remove from oven. Turn bacon over. Coat with light brown sugar. Place back in broiler. When brown, crisp remove from broiler.
Lay "wax" paper on counter. Lay cooked bacon on wax paper in single layers. Cover this layer of bacon with wax paper and repeat til all your bacon is "laid" out.
Throw used tinfoil out. Place fresh tinfoil on broiler with each cooking layer as the sugar turns black and burns.
Leave the bacon on counter overnight, covered, and as it cools it carmelizes and becomes crisp like a piece of candy. We heat prior to breakfast for 5 minutes in a 350 deg oven as cold bacon in the morning is not too exciting.This bacon is a "Keeper" !Bon Apetite.
