Yield: 4 servings
Ingredients:
1 3/4 cups all purpose flour
1/2 cup cake flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup butter, chilled
1 cup whipping cream
3/4 fresh cranberries or frozen ones, thawed
Instructions:
Preheat oven to 375. Lightly butter a baking sheet.
Mix dry ingredients together in a large bowl. Cut the butter into 1/2 inch cubes and toss with the flour mixture. With pastry blender, cut the butter into the dry ingredients until the mixture resembles coarse meal.
Set aside 2 tablespoons of cream. Add the remaining cream and cranberries to the flour mixture and stir only until just combined.
Turn the dough out onto a lightly floured surface and pat into a large circle for heart shaped (Amore!!) scones, to be cut with a large cookie cutter.
Brush lightly with the reserved cream, place on buttered baking sheet and bake for 15-20 minutes.
Once out of the oven, sprinkle with sugar and they are ready to serve!
