Decadent Cocoa Zucchini Bread

3 cups flour
½ cup cocoa powder
1 teaspoon cinnamon
2 ½ teaspoons baking powder
1 ½ teaspoons baking soda
½ teaspoon salt

3 lightly beaten eggs
2 cups sugar
1 cup canola oil
2 teaspoons vanilla
2 cups firmly packed shredded zucchini
½ cup milk

1 cup chopped nuts - try pine nuts!

  1. Preheat oven to 350. Butter and flour one Bunt pan or two bread pans.
  2. Sift together first 6 ingredients in a medium bowl.
  3. Whisk next 6 ingredients together in a large bowl until well blended.
  4. Add dry ingredients to wet, mixing until just blended. Stir in nuts.
  5. Pour batter into prepared pans.
  6. Bake for 50 to 60 minutes until done.
