Peach Upside Down French Toast
Ingredients:
4 T Butter
1 1/4 C milk
1 1/2 T Corn Syrup
3/4 C Brown Sugar, firmly packed
3/4 t Vanilla Extract
4 Large Eggs, beaten till creamy yellow
Dusting of Cinnamon
Toppings: 1 T sour cream (3/8 cup total) &
8 fresh or thawed unsweetened peach slices
Melt butter in microwave in 9"x13" casserole. Add syrup and sugar to butter, heat briefly to melt, stir, then heat till mix is bubbly in casserole. Top with two bread slices over pan. Mix eggs, vanilla, & milk and pour over bread stacks. Dust stacks with cinnamon. Cover and refrigerate 1 hour or overnight. Bake, uncovered in preheated 350 oven for 45 minutes or till knife inserted in center comes out clean. To serve, loosen edges of bread from pan sides with knife blade. Cut into individual bread size servings. Invert on plate so caramelized sugar is on top and top with preference of sour cream or 3 peach slices or both.
